Any idea how much it should cost for Laminate flooring of this size:

Including labor and material. we are building new home, and cheapest laminate builder is giving is 5K.

14' Wide
26' Length

I paid around 3.00/sq ft. installed with, I think, 12mm laminate, which is not the cheapest, but not the best either.  26x14 is about 364 sq ft., you can do the math.  I wouldn't pay more than 5.00/sq ft installed for laminate.

I used this stuff
http://www.thehybridfloors.com/res/home.html

came out pretty good.  Little more than traditional laminate but I say it was worth it.

They have samples of this stuff at the irvine pacific design center.  If you just walk in there and say you want to browse the floor samples before your appointment they should just let you run freely.

builder is charging me 6K for laminate flooring, but maybe that is of a super duper quality? roughly at 16$ per sq

you can get good laminate installed for $5/sq ft and lie someone mentioned earlier you can get it for as low as $2.50 sq ft.

$16/sq ft is too much even for nice real hardwood.  High quality solid wood floor should cost you $12~$14/sq ft.  I would go with standard carpet with the builder and get a outside contractor to do the floor after you close.
