Leftover Turkey Recipes

If you're like me, when you think about Thanksgiving dinner, you probably anticipate the leftovers as much as the meal itself. Take advantage of the seasonal sales and buy a turkey even if you have Thanksgiving dinner elsewhere, or buy an extra if you have the freezer space. Turkey can replace chicken in many recipes, and it's a wonderful addition to soups and casseroles. Freeze cooked, boned turkey in portions by wrapping in aluminum foil and sealing in a freezer bag, then thaw and chop what you need for a recipe.

Last year, I won a "Take Five" contest on the OC Register. This is where readers submit recipes containing five ingredients or less (not including basics like water, salt, pepper, etc.) My winning recipe was "Lightning-Fast White Chili". It calls for ground turkey, but I plan to try it with a pound of chopped left over turkey breast today... I haven't done it yet, but I don't see why it wouldn't work! Here it is:



<strong>Lightning-Fast White Chili</strong>

Yields 6 servings



Ingredients



1 lb. ground turkey**

1 C. frozen corn kernels

1 C. salsa

1 C. water

2 (14 oz.) cans Great Northern beans, drained and rinsed

8 oz. Monterrey Jack cheese (or Pepper Jack if you can handle it), shredded or cut into cubes



In a large pot, brown the ground turkey. Add corn, salsa, water, beans, and cheese. Stir together. Cover and simmer over low heat for 15-20 minutes or until cheese has melted. Serve.



** If using left over turkey, skip the browning step and continue.
 
My favorite (and my son's) is just plain old Turkey Soup. Take the leftover turkey and heat it in chicken broth and some water. Put some cooked pasta and/or white rice in and season as you like. You can throw in some vegetables or just eat it plain. I swear I could live on it for days. I usually season it with a little fresh lemon and soy sauce (I know that sounds strange).
