You'd be surprised at what they'll pick on.  I have small pebbles as ground covering for my 2 ft planter area around the perimeter and the design committee said that's not allowed and I need to replace with brown mulch.  I thought pebbles as ground covering is a pretty standard look.

I used Galvan Landscaping, he did many yards in Stonegate.  His workmanship is so-so, but his price is pretty good.  If you're picky about small details, you should find someone else.  The stone is travertine.

These used to be one of my favorite deserts growing up.  In Taiwan, we call it Mi Tai Mu (???).  You use to be able to get these at 99 Ranch and just add the sugar water yourself.

For shims, you can cut up a Kleenex box and stick them between the hinge and the frame.  I think if the door is closing itself, you add the shims to the bottom hinge.  If it wants to stay open, add shims to the top hinge.
